Production Process

1. Harvest
The olives are gathered at their optimal ripeness, handling the fruit with care and avoiding bruising in order to preserve aromas, freshness, and natural properties.

2. Milling
The olives are milled within a few hours of harvesting. A homogeneous paste is obtained that concentrates the pulp, skin, and stone — the foundation of the future oil.

3. Cold Extraction
The paste is gently kneaded and cold-centrifuged. This separates the oil without heat, keeping flavour, aroma, and nutritional value fully intact.

4. Bottling
The oil rests, is cleared of impurities, and is carefully bottled. The result is a pure, balanced EVOO that is true to its Mediterranean origin.
